today i have been baking for the whole day, some lovely gingerbreadchocolate cupcakes for tessa! i thought i'd share some photos and the recipe with you. :) i won't promise the translation is good, it was very hard to translate the recipe and how to do it all!
ainekset / ingredients
2 munaa / 2 eggs
1,5 dl sokeria / 1,5 dl sugar
4 dl vehnäjauhoja / 4 dl wheat flours
2 tl leivinjauhetta / 2 teaspoons baking powder
½ tl neilikkaa / half a teaspoon of clove (or is it pimpernel?)
½ tl kanelia / half a teaspoon of cinnamon
½ tl inkivääriä / half a teaspoon of ginger
1 tl vaniljasokeria / 1 teaspoon vanilla sugar
2 riviä rouhittua piparkakkusuklaata (itse laitoin n. 3 riviä) / 2 rows of milled gingerbread chocolate (i don't think they sell that in other countries, but you could use normal chocolate too + that i myself put about 3 rows)
1 dl maitoa / 1 dl milk
50 g sulatettua jäähdytettyä margariinia tai juoksevaa margariinia / 50 g melted margarine
kuorrutus / frosting
200 g appelsiinituorejuustoa / 200 g cream cheese (flavour: orange)
100 g piparkakkusuklaata/tummaa suklaata (minä käytin piparisuklaata) / 100 g gingerbread chocolate or dark chocolate (i used gingerbread chocolate ofcourse)
2,5 dl kermaa (käytin flora vispiä) / 2,5 dl cream
sokeria maun mukaan / sugar as much as you wish
mill the chocolate before you start. whisk the eggs and the sugar until it's frothy.
combine all the dry ingredients. blend the dry ingredients, the milk and the margarine to the egg&sugar mixture.
at the end, add the chocolate. put the whole mixture into the cupcake molds (paper or silicone, you choose). bake in a 200C warm oven for 10-15 minutes.
frosting: melt the chocolate, let it cool down for a while and combine it with the cream cheese. whip the cream (don't forget the sugar!) and take about one third of and combine it with the chocolate-cream cheese mixture.
you can decorate the cupcakes as you wish, but as an example i put the chocolate frosting first and then the whipped cream. i made the card, when i was waiting for the cupcakes to cool down. :)
